
Did you know that chickpeas can be used to make croutons for your salad? Over on the blog The Fresh Sheet, a new post discusses a recipe for making a fresh springtime salad with croutons made from chickpeas.
These chickpea croutons are made by combining chickpeas with grated carrot, spices, olive oil, lemon juice, and water in a food processor. The mixture is then shaped into little squares, each made from about two teaspoons of the chickpea mixture, and the squares are baked in the oven on a non-stick baking sheet.
The chickpea croutons can be made up to three days in advance. And thanks to the nutritional properties of chickpeas, these chickpea-based croutons are bound to be richer in protein, fiber, and vitamins than traditional croutons.
