Move over, meatballs! Spaghetti has found itself a delicious new sidekick in the form of the chickpea. From the blog Living the Gourmet comes this interesting recipe for spaghetti with chickpeas and feta cheese.
The recipe calls for canned chickpeas, sun dried tomatoes, frozen spinach, crumbled feta cheese, sliced red onion, and a few other flavors and ingredients (and spaghetti of course). The chickpeas are sauteed in a frying pan along with some of the other veggies and ingredients, and then mixed with the spaghetti noodles.
Since chickpeas are naturally high in protein, they can make an excellent meat substitute in various recipes, and vegetarians and vegans can happily enjoy this delicious twist on a traditional pasta recipe.
