Lemony Chickpea Salad

Ingredients

  • 3 cups cooked chickpeas
  • 1 1/2 cups finely chopped cucumber
  • Juice and zest of one lemon
  • ¼ cup olive oil
  • ¼ cup finely chopped dill
  • ¼ tsp salt, or more to taste

Directions

  1. Place the cooked chickpeas and chopped cucumber into a large bowl.
  2. In a smaller bowl, whisk the lemon juice, lemon zest, olive oil, dill and salt.
  3. Add the dressing to the chickpeas and cucumber, then mix well.
  4. Taste and add more seasonings if necessary.

Serves 6
