Ingredients
- 2 tbsp olive oil
- 3 shallots, finely sliced
- 2 cloves garlic, minced
- 1 tsp cumin seeds
- 2 cans chickpeas, drained
- 1/2 cup chopped parsley
- 1/2 cup chopped coriander
- 1/4 cup chopped mint
- Juice of 1 lemon
- 1/4 cup toasted sesame seeds
- salt and pepper to taste
Direction
In a fry pan over medium heat, add olive oil and fry off the shallots, garlic and cumin seeds.
Take the pan off the heat and cool slightly.
In a food processor, lightly blend together the chickpeas, parsley, coriander, mint, lemon juice and sesame seeds.
Add salt and pepper to taste and lightly blend again.
Shape the mix into four patties and pan fry them on each side for 4 to 5 minutes or until they are golden brown
These patties are great served in brown bread rolls with mixed green salad.
