Hummus Healthy Lunch For Students

MINNEAPOLIS (WCCO) — It’s back to school for a lot of kids, and it’s important to make sure they’re eating healthy away from the home.
Natalie Kane talked with chef Jeff Cruz from Life Cafe at Life Time Fitness for quick and healthy meal ideas.
Cruz said the key is to balance protein, healthy fats, and carbs with fruits and veggies.

 “You’re going to have sustained energy, you’re going to be able to get through your day a lot easier, you’re going to be able to get to the next meal. The protein is going to give you the fuel that you need,” he said.

Cruz demonstrated how to make healthy hummus wraps to for a light, healthy lunch, using tomatoes, cucumbers, spinach and feta cheese. Cruz said you can always use chicken breast for kids who don’t like hummus.
He also said you can make five wraps on Sunday night, wrap them in wax paper and foil and put them in the freezer. Then, pop them in the microwave for a minute and a half.
Cruz said to stay away from saturated fats, the kind you find in chips and bacon.
