Featured Recipe: Tangy Balsamic Roasted Chickpeas

On the blog Pickles & Honey, Amanda writes about a recipe for tangy balsamic roasted chickpeas. The recipe involves marinating the chickpeas in balsamic vinegar, then adding olive oil, salt, pepper, and baking them until crispy. According to the blog post, they are reminiscent of salt and vinegar potato chips, but much more satisfying, and anyone who has never tried roasted chickpeas before should try them.
As an interesting side note, the recipe specifically recommends using dried chickpeas over canned chickpeas, not just because the flavor and texture is much better, but also because the dried variety are significantly cheaper than the canned variety. (Dried chickpeas are easy to prepare, but require a bit of extra planning since they need to soak in water overnight.)
